But while restaurants like Radius-Valpo are known for signature dishes, it was his Box Lunches and Sandwich Catering that the chef discovered his passion for pleasing people through food.
Artesian Meats and Eats! As the son of an importer of gourmet meats, cheeses and breads, Pavlou learned the secret to any great cuisine is the quality of the ingredients. The second-generation importer combined his expertise and appreciation for artesian meats and ingredients with his two passions, cooking and his wife Tina.
Pavlou’s unique talents for creating innovative deli sandwiches soon had people lining up. Without a restaurant front, Pavlou sold his gourmet meats, bread, and cheeses as box lunches, and a star was born! Chris and Tine Pavlou named each box lunch after the world’s best Culinary cities! This was the earliest beginning of Sandwich City!
